Ingredients :

450 g Italian-seasoned sausage meat, removed from casing
235 ml sliced mushrooms
1 teaspoon fine sea salt
475 ml marinara sauce

3 large egg whites
180 ml blanched almond flour
1 teaspoon baking powder
¼ teaspoon fine sea salt
2½ tablespoons very cold unsalted butter, cut into ¼-inch pieces
Fresh basil leaves, for garnish

Directions :

  1. Preheat the air fryer to 204 º C.
  2. Place the sausage in a pie pan (or a pan that fits into your air fryer). Use your hands to break up the sausage and spread it evenly on the bottom of the pan. Place the pan in the air fryer and air fry
    for 5 minutes.
  3. Remove the pan from the air fryer and use a fork or metal spatula to crumble the sausage more.
    Season the mushrooms with the salt and add them to the pie pan. Stir to combine the mushrooms and sausage, then return the pan to the air fryer and air fry for 4 minutes, or until the mushrooms are soft and the sausage is cooked through.
  4. Remove the pan from the air fryer. Add the marinara sauce and stir well. Set aside.
  5. Make the biscuits: Place the egg whites in a large mixing bowl or the bowl of a stand mixer. Using a hand mixer or stand mixer, whip the egg whites until stiff peaks form.
  6. In a medium-sized bowl, whisk together the almond flour, baking powder, and salt, then cut in the butter. Gently fold the flour mixture into the egg whites with a rubber spatula.
  7. Using a large spoon or ice cream scoop, spoon one-quarter of the dough on top of the sausage mixture, making sure the butter stays in separate clumps. Repeat with the remaining dough, spacing the biscuits about 1 inch apart.
  8. Placethe pan in the air fryer and cook for 5 minutes, then lower the heat to 164 º C and bake for another 15 to 20 minutes, until the biscuits are golden brown. Serve garnished with fresh basil leaves.
  9. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated 176 º C air fryer for 5 minutes, or until warmed through.
