Ingredients:
¼ cup olive oil
¼ cup mint, fresh and chopped
8 lamb rib chops
1 tbsp. garlic, minced
1 tbsp. rosemary, fresh and chopped

Method:

  1. Add rosemary, garlic, mint, olive oil into a bowl and mix well.
  2. Keep a tbsp. of the mixture on the side for later use.
  3. Toss lamb chops into the marinade, letting them marinate for 30 minutes.
  4. Preheat the cast-iron skillet over medium-high heat.
  5. Add lamb and cook for 2 minutes per side for medium-rare.
  6. Let the lamb rest for a few minutes and drizzle the remaining marinade.
  7. Serve and enjoy!
