5 tbsp. ghee butter
5 oz. trout fillets
2 garlic cloves
1 tsp rosemary
1 lemon
2 tbsp. capers
Salt and pepper to taste


  1. Preheat the oven to 400F
  2. Peel the lemon, mince the garlic cloves and chop the capers
  3. Season the trout fillets with salt, rosemary, and pepper
  4. Grease a baking dish with the oil and place the fish onto it
  5. Warm the butter in a skillet over medium heat
  6. Add the garlic and cook for 4-5 minutes until golden
  7. Remove from the heat, add the lemon zest and 2 tbsp. of lemon juice, stir well
  8. Pour the lemon-butter sauce over the fish and top with the capers
  9. Bake for 14-15 minutes. Serve hot
